Every other food in the world, liquid or solid, is cooked in accordance with gravity. Sitting on a pan or grill above a flame, or on a sheet inside an oven.
Lavash is cooked on the SIDES of a bottle-shaped brick oven, facing almost downward. How does it stay there? Why is it made that way? The article doesn't explain.
